Chicken Stir-Fry with Soba Noodles

Makes 4 servings

4 teaspoons cornstarch

1-¼ cups chicken broth (homemade or low sodium), as needed

½ teaspoon dark sesame oil

2 tablespoons minced garlic

3 tablespoons minced ginger

1 pound boneless skinless chicken breast, cut into strips
